Application Cucumbers are best eaten raw. They are used in many different cold salads. Armenian cucumbers can be eaten without peeling the skin. The skin is very soft and palatable, and very nutritious when eaten raw.
Storage Tips To store, refrigerate in plastic perforated bag for up to a week. Do not wash until ready to use.
One cup of sliced cucumbers, with the skin on,
also contain 223.60 IU of vitamin A, which is 4.5 percent of the RDA, and
5.5mg of vitamin C which is almost 10 percent of the RDA. Other trace
vitamins in cucumbers are niacin and folate (both from the B vitamin
family), B6, vitamin E and vitamin K.
Ellen's MEMORY CUCUMBER & ONIONS
(No cooking Recipe)
In a medium glass bowl, mix:
1 cup vinegar
1 cup sugar
1/2 cup water
Peel (if you wish, though not necessary)
about 2 medium cucumbers and 1 onion.
Slice them about 1/4"-1/2" thick
Put them in pickle mixture, cover,
refrigerate. (Better after overnight; better every day
thereafter.)
That is it. No cooking, no jars but
don't use plastic, it absorbs the vinegar smell. When you
have more cukes or need more onions, just add them into the glass
bowl. Older will be softer, newer will be crisper. You
can add in the same ratio; vinegar/sugar/water, to make more.
This is a really 'zingy' mixture...be ready!
